Description:
Finca La Riviera, situated in the village of La Estrella, Risaralda, was established to advance Julio Madrid’s pursuit of excellence in exotic coffee production. Recognized as one of Colombia’s leading producers in this field, Julio regards this farm as his premier operation, cultivating over 15 different coffee varieties. The Caturra Chiroso variety has been under cultivation at Finca La Riviera for two years; Julio selected this variety for its genetic characteristics and the farm’s favorable altitude, climate, and soil that support optimal development. Presently, only the traditional washed method is employed to process the Chiroso variety, ensuring the preservation of its sensory clarity and expression of terroir. Following processing, the coffee undergoes slow drying under indirect sunlight for 25 days before being transferred to a mechanical dryer for an additional 5 days.
While the other processes result in distinctive cup profiles, this method is intended for those interested in experiencing a coffee developed with the producer’s specific aim of emphasizing terroir and variety characteristics.
