Candelaria derives its name from the Cenotes de Candelaria, a remarkable area of natural pools where the water color transitions from turquoise blue to light green. Huehuetenango is the highest coffee-growing region in Guatemala and one of the three regions that are non-volcanic. Although the journey from Guatemala City is lengthy, it offers stunning landscapes.
The area is characterized by numerous rivers and streams, and during the drive, one encounters several small towns where refueling and enjoying homemade tamales are common experiences. The abundant natural water sources in the region support local coffee producers significantly. Due to the remote nature of Huehuetenango, most producers process their own coffee, utilizing fresh water from the area. This region features many microclimates, with warm air rising from the Plains of Tehuantepec in Mexico and cool air descending from the Cuchumatanes Mountains. These unique climatic conditions enable the cultivation of coffee at high elevations within Guatemala.
This particular lot is managed by our importerโs Guatemala export and milling partner, Dinamica. The various smallholder producers contributing to this lot oversee their growing, wet milling, and drying processes independently. Once the coffee reaches the appropriate moisture content through drying, it is transported to Dinamicaโs facility in Guatemala City. There, the coffee undergoes destoning, hulling, and sorting by color and screen size.
